Veggie Steak Stir-Fry

A very simple stir-fry that comes together in moments, and uses veggie steak to optimum value.

Yesterday I posted how to make Seitan Steaks (recipe here) and this is the perfect meal to use that recipe. Obviously, you can use processed veggie meat (but when you make your own you know exactly what’s in it) to make this stir-fry, the option is yours.

A very simple but tasty stir-fry using veggie meat.

Ingredients

  • 1 cup Basmati rice (or long grain, or brown, or wild rice)
  • 2 pickled lime slices, or a wedge of lime.
  • 2 tbsp grape seed oil (or coconut oil)
  • 1 onion, cut in wedged
  • 1 green bell pepper, chopped
  • 1 red bell pepper, chopped
  • 1 cups veggie meat strips (or Seitan steak), sliced thinly
  • ½ tsp chilly seeds
  • ½ tsp Chinese 5 spices
  • 1 clove garlic, crushed or minced
  • 1 cm piece root ginger, minced or grated
  • ½ cup stock (or ½ a veggie stock cube in boiling water)
  • 1 tbsp cornflour (in 2 tbsp water, mixed)
  • sesame seeds

Directions

  1. Boil the rice with enough water to cover it by 1 inch (2 cm) add in the slice of pickled lime (to flavour the rice) with a good pinch of salt. Simmer for 12-15 mins. Then sit the pan on a wet cloth ~ which steams the rice in the sauce pan and lifts it off the bottom. Remove the lime, while gently fluffing the rice with a fork. (You can use the lime as an edible garnish for the meal.)
  2. Heat oil in a wok, add in the onion and peppers and stir fry for 5 mins. Add the veggie meat, chilli, 5 spices, garlic, and ginger and stir fry another minute.
  3. Make up the cornflour (slurry) and the stock and add them to the stir fry, cook until the sauce thickens.
  4. Fill half a bowl with rice, and the other half with one portion of stir fry, sprinkle over the sesame seeds and add in a picked lime slice cut in two.


NB: You can sub the rice for quinoa or couscous, or cauliflower rice.
