American Meatloaves

These are individual-sized Meatloaves that cook easily and are very filling.

Kids of all ages (from 3 to +90 years lol) will love how tasty these meatloaves are, especially when you serve it with a rich tomato sauce, and veg. I’ve used 1/4 cup gram (chickpea) flour and 1/4 cup none-dairy milk as the egg substitute.

American Meatloaves

Ingredients

  • 1 small onion, chopped
  • 1 clove of garlic, minced
  • 2 tbsp oil
  • 1 seitan steak, chopped
  • 1/2 cup oats
  • 1/4 cup gram flour
  • 1/2 tsp Italian seasoning
  • salt and cayenne pepper to taste.
  • 1/4 cup none-dairy milk
  • 2 tbsp tomato puree/paste

Directions

  1. Gently fry the onion and garlic in the oil, until the onion is soft.
  2. Allow it to cool, before them it in a blender with the pieces of the seitan. Blend until the seitan becomes like ground meat.
  3. Preheat the oven to 180 degrees C/350 degrees F/gas mark 4.
  4. Empty into a bowl and add the oats, flour, herbs, salt and pepper. Mix well, then stir in the milk and tomato puree. Pack the mix into oiled ramekins (3 or 4). Place on a backing tray and bake for 40 mins.
  5. Allow to cool slightly, before trying to run a knife blade around the inside of each ramekin. Carefully, ease the mini-loaves out of their ramekins. Serve with your favourite tomato sauce.

NB: If you’re worried about them sticking to the ramekins, then line each ramekin with a little oiled tinfoil..
