Stuffed Mock Duck

This mock duck recipe is Asian-inspired (but has a dried cranberries stuffing).

Although Asian-inspired, this surprisingly would make the perfect vegan roast for Christmas dinner too. (Try it with roast potatoes, glazed carrots, baked brussels, green beans, garlic mushrooms, and a rich onion gravy.)

NB: To make the mushroom powder: blitz 4 or 5 dried shiitake mushrooms until powder. (You can use in soups, or for flavouring mock meats and in tofu marinades.)

Ingredients

    To Make Stuffing:
  • ½ onion, copped
  • 1 lemon grass
  • 6 tbsp dried cranberried
  • ½ tsp garlic powder
  • ½ tsp basil
  • ½ tsp oregano
  • For mock duck:
  • 1 cup Vital Wheat Gluten
  • 3 tbsp gram flour
  • 1 tsp Chinese 5 spice powder
  • 1 tsp sea salt
  • 3 tbsp *mushroom powder (see note)
  • 1 tbsp maple syrup
  • 5 tbsp olive oil
  • 1 tsp liquid smoke
  • 1 heaped tbsp vegetable suet
  • 1 small sweet potato, cooked
  • ¼ cup soy milk

Directions

  1. This is a two part process. (2nd part below.)
  2. First make the stuffing, by throwing all the ingredient into a blender and pulsing it until they are like breadcrumbs.
  3. Add the flours, spice, salt, and mushroom powder to a large bowl and mix together.
  4. Stir together the syrup, oil and liquid smoke.
  5. Add the suet, and mashed potato to the dry ingredients. Then stir in the wet ingredients. Bring the wheat meat together with your hands, making sure to knead and pound it to form the gluten strands.
  6. Once it looks a bit like meat, flatten it and let it rest for 10-15 mins. (Try to make sure it is heart shape ~ thinner at the edges than in the centre ~ this will aide you in shaping the duck around the stuffing.)
  7. Lay the mock duck on a 1 foot square piece of muslin. Pile the cranberry stuffing along the centre/of the flattened “meat”, and fold the edges in (don’t worry if they don’t quite meet).Now wrap the edges of the muslin over each other. Twist the ends and secure with freezer ties on both ends.
  8. Place the join side down in a large cast iron casserole dish. The duck is now ready to be boiled in broth. (See below for details of part 2 of the process.)

Now that you have your mock duck prepared, it’s time to boil it in a flavourful broth to turn it from paste into a tasty seitan joint that will cut just like a normal joint.

Ingredients

  • 1 stuffed mock duck/seitan joint (wrapped in muslin)
  • 5 cups water
  • 1 tbsp mushroom soy sauce (normal will do, if it’s not available)
  • 1 tbsp maple syrup
  • 2-3 bay leaves
  • 1 tsp all spice berries (whole)
  • 5 cloves garlic
  • 1 tbsp bbq sauce
  • 1 inch piece root ginger
  • 1 tsp Chinese 5-spice powder

Directions

  1. This is a two part process. (1st part above.)
  2. Add all the ingredients into your cast iron casserole dish (containing the mock joint and bring the water to the boil on a high heat.
  3. Once it’s boiling, reduce the heat to medium and put the lid on. Cook for 30 mins.
  4. Warm up your slow cooker on HIGH. Transfer all the content of the casserole dish to the slow cooker and cook for another 90 mins (1 hr 30 mins).
  5. Unwrap the seitan carefully and put under the grill/broiler to crisp up the outside ‘skin’.


NB: Before grilling (broiling), you can brush over oil, or BBQ sauce, or a little maple syrup to make the outer coating even crispier.
